Lagers are bottom-fermented beers. This means that the fermentation takes place in vats of 4°C to 8°C. Basically, it was the Bavarians who invented this style, the mountain climate offering rather low temperatures. Bavaria has been brewing beers this way since the 14th century.
But it was really in 1841 that the first industrially exploitable lager was created by a Bavarian and an Austrian. In fact, it was the first time that a beer of this type was brewed with real scientific mastery, which made it possible to overcome a major concern of the time: the conservation of beer. Indeed, the beers of the time had a very limited shelf life and this process made it possible to better preserve the beverage.
It was the following year that the first brewery developed the modern lager: Pilsner Urquell. It is still active and is located in Pilsen in the Czech Republic.
It has an imposing cooling tower. This tower is filled with ice at the end of the winter in order to be able to brew all year round. It is still used today, especially for the unfiltered Pilsner Urquell. It is there that the term pils was registered as a protected trademark.
Now the most consumed style in the world, lager is actually a fairly young beer since the pilsners and lagers we know are actually less than two centuries old. This is nothing compared to other styles such as double, triple or pale ale beers.
