                          Cassandra is a complex beer full of flavor. Its bitterness comes from both its coffee-flavored roasted beans as well as the use of earthy European hop cones/ The addition of oyster shells at the end of the boiling process brings out a chocolate-licorice sweetness . The shells are taken to the Siphon restaurant where the oysters were freshly prepared and consumed by visitors earlier on the day of the brew.

                          Attention this product has a date of preference to consume before which is exceeded.

                          Blinker is made with modern ingredients and techniques. It is made from cereals and earthy and spicy European hops (Challenger and Goldings) from the Poperinge hop fields. Dryness is achieved by selecting a highly attenuating yeast strain.

                          Brewery Siphon

                          Siphon is a brewery that was born from the alliance of four friends, each employed in one of the breweries in the region, who decided to open their own brewery together.

                          With its know-how and experience, the Siphon brewery has taken up residence in a former sheep barn in Damme near Bruges. The production is very limited because they brew on five hectoliter systems, which is quite rare, the smaller breweries operating with ten hectoliters.

                          This brewery is very young since it was founded in 2016. Right next to the brewery a restaurant that cooks with beer has opened. The two companies also work together in the development of beers or dishes. If you want to eat there, book before because the restaurant is a great success.

                          The desire of the brewers at Siphon was to create a brewery that would do something other than ‘Oud Bruin or Flemish reds. They offer English styles such as IPAs, session IPAs, stouts, etc.

                          The brewery is located along an old canal that leads to the port of Zeebrugge. The setting is ideal for a bike ride or a walk.
